Yummy Meals

I cycle periodically between different meals. Every 5 weeks or so I will find a new favorite and "abandon" the last meal. (not a general rule, I am very inconsistent when it comes to this particular subject)

This entry is an effort do document them and keep recipes.

Tuna Rice Salad

I started making this meal around the beginning of June 2024

      Ingredients

      1. abt a cup of rice
      2. a can of tuna
      3. one spring onion
          I buy them in bunches
      4. any vegetables-which-you-can-eat-raw that you have laying around.
I like to use mushrooms and/or carrots
      5. condiments
          mayo
          soy sauce
chili oil (if you like spicy things)

      Recipe

        1. cook your rice, and whilst that is happening, prepare a bowl

        2. toss the can of tuna lightly strained into your bowl along w/ your rice

        3. chop up the spring onions and other veg and also toss them into the bowl

        4. add condiments and MIX

PB & Tomato Hodge Podge

I made this meal from around November 2023 to April 20204

Please be noted this was a depression meal and thus is not actually that good

      Ingredients

      1. abt a cup of rice
      2. one tablespoon peanut butter
      3. half a can of tomato pulp
      4. half a can of coconut milk
      5. white onions 1 or 2
      6. seasoning
          soy sauce
          salt & pepper
chili oil (if you like spicy things)

      Recipe

        1. cook your rice, and heat up a pan to medium

        2. cut the onion in half from top to bottom, and then slice so that you have pieces that look like half of an non-deepfried onion ring (didn't know how else to explain)

        3. simmer the onions in the pan until they're kind of floppy

        4. add the peanut butter, coconut milk and tomato pulp to the pan

        5. season and serve with the rice

Possibility of adding canned tuna if you're feeling extra special

Lazy Leek Pie

I make this meal occasionally, when i feel like i want to treat myself, but am lazy

      Ingredients

      1. one pie sized puff pastry roll
      2. one big leek
or a bag of already cut, frozen leek
      3. grated cheese
      4. 4 eggs
      5. some type of edible liquid
          milk
          water
          coconut milk?
      6. mustard
      7. salt & pepper

      Recipe

        1. get a pie dish or a pie-dish-sized pan, line it with baking paper if your pastry roll doesn't come w/ one, and put the pasty in your dish

wait until you turn oven on, because you NEED to make sure you have the proper dish before you start

        2. heat the oven to 150*C

        3. prick the pastry and lather the bottom with mustard (be generous with it)

        4. cut the leek in slices and wash it (if you have the fresh kind)

        5. toss it into the dish

        6. mix eggs and liquid together with salt and pepper in a bowl and add to dish

        7. add grated cheese on top and shove into oven for 20min?
